   Meat Pickle  (from Kerala)

 Ingredients

  • Lamb -750 gm (cut into 1 cm pieces)
  • Oil -3 tbsp
  • Mustard seeds -1/2 tsp
  • Onion -1
  • Ginger-1"piece (finely chopped)
  • Garlic-4 cloves (finely chopped)
  • Salt-1 tsp
  • Chilly powder-1/2 tsp
  • Turmeric-1/4 tsp
  • Cumin-1/4 tsp (ground)

For the Marinade

  • Black Pepper-2 tsp
  • Fenugreek Seeds-1/4 tsp
  • Dried red chillies-2
  • Cinnamon-1 inch
  • Cloves-8
  • Cumin-1/4 tsp
  • Salt-1/2 tsp
  • Vinegar-1 tbsp

Method :-

  • Grind pepper, chillies, cloves, cinnamon, fenugreek, cumin and salt to a fine powder.
  • Mix with vinegar and 3 tbsp water.
  • Rub over meat and marinate for 4 hours.
  • Heat oil in a wide pan .Add mustard seeds.
  • When they pop, add garlic, ginger.
  • Stir for 2-3 minutes.
  • Add the meat and fry for about 10 minutes until brown.
  • Add salt, chilly powder, turmeric, cumin.Fry for 2 minutes.
  • Cook on low heat for 2-3 minutes till nearly dry.
  • ool and store in a air tight jar. 

    As this is a pickle one can store it for a few months in refrigerated conditions.
