Meat Pickle (from Kerala)
Ingredients
- Lamb -750 gm (cut into 1 cm pieces)
- Oil -3 tbsp
- Mustard seeds -1/2 tsp
- Onion -1
- Ginger-1"piece (finely chopped)
- Garlic-4 cloves (finely chopped)
- Salt-1 tsp
- Chilly powder-1/2 tsp
- Turmeric-1/4 tsp
- Cumin-1/4 tsp (ground)

For the Marinade
- Black Pepper-2 tsp
- Fenugreek Seeds-1/4 tsp
- Dried red chillies-2
- Cinnamon-1 inch
- Cloves-8
- Cumin-1/4 tsp
- Salt-1/2 tsp
- Vinegar-1 tbsp

Method :-
- Grind pepper, chillies, cloves, cinnamon, fenugreek, cumin and salt to a fine powder.
- Mix with vinegar and 3 tbsp water.
- Rub over meat and marinate for 4 hours.
- Heat oil in a wide pan .Add mustard seeds.
- When they pop, add garlic, ginger.
- Stir for 2-3 minutes.
- Add the meat and fry for about 10 minutes until brown.
- Add salt, chilly powder, turmeric, cumin.Fry for 2 minutes.
- Cook on low heat for 2-3 minutes till nearly dry.
- ool and store in a air tight jar.
As this is a pickle one can store it for a few months in refrigerated conditions.
