Gobi Paratha
Ingredients
- 3 teacups whole meal flour.
- 2 small cauliflowers
- 1 chopped onion
- 2 chopped green chillies
- 1½ teaspoons dhana-jira powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon chopped ginger
- 1 tablespoon chopped coriander
- salt to taste
Method :-
- Grate the cauliflower. Sprinkle one teaspoon of salt and one fourth teaspoon of turmeric on the cauliflower. Mix it well.
- Allow the mixture to soak for 15 minutes.
- Squeeze out the water from the grated mixture.
- Add the dhana-jira powder, coriander, green chillies, onions, ginger, salt and chilli powder and mix it well.
- The dough has to be kneaded very well.
- Taking a small ball of dough, flatten it and put a tablespoon of the mixture in the center. Cover the mixture by drawing up the edges towards the center. Press on a flat surfaced board and roll out into a round as large as a saucer.
- Put the flattened dough on a hot iron plate (or skillet), cook for a minute or two and turn up and down. After a minute, add a little ghee around the edges.
- Turn again and fry the other side. When brown patches appear on both sides, the GOBI PARATHA is ready.
Gobi paratha tastes good when served hot and with pickle.
