   Dosa

Ingredients:

  • Parboiled Rice 1 cup
  • Urad Dal 1/2 cup
  • Salt 1/4 tsp or to taste
  • Oil

Method :-

  • Rice and Dal are to be washed and soaked separately for 6 hours. 
  • While adding little water at a time, grind to a fine paste separately, 
  • Mix the two well and add salt.
  • The mixture should be like pancake batter.
  • Cover and keep aside for 12-16 hours in a warm place to ferment.
  • The batter will be full of tiny bubbles.
  • Heat a frying pan .Pour in a little batter.
  • Spread in circular motion until the batter is spread thinly and evenly.
  • Dribble a teaspoon of oil on the dosa, spread quickly.
  • Cover and cook for about 2 minutes or till dosa is golden brown at the bottom
  • Turn the dosa upside down, cook till light brown on the other side.
  • Dosa is generally served with Sambar, Chutney and Potato Masala.

Pour the mix in pan in the centre with the help of a deep container and then move towards the out in circles to make paper like dosas.  
Never thin the portion you have already spread out because this tends to make the dosa thick by not letting little holes from forming on the surface of the dosa . It is advised that more rice and less urad dal be used to get crispy dosas.
