Bhindi Fry
Ingredients :
- 2 tsp garlic, minced
- 1tsp turmeric
- 1 tsp roasted cumin powder
- 3 tsp coriander powder
- 1 tsp dry mango powder
- ¼ cup grated coconut
- 4 tbsp oil
- 1 tbsp chopped coriander
- 1 tsp red chili powder
- salt to taste
Method :-
Wash and drain bhindis. Dry each bhindi piece by piece thoroughly. Chop the top and the bottom of each bhindi and cut in to 2 halves lengthwise.
Heat oil in a pan. Add coriander powder. Fry it in for a min. Add the bhindis and turmeric.
Mix well, cover and cook till the bhindis are tender.
Squeeze some lemon juice before cooking to avoid sliminess.
Uncover and add all the remaining ingredients. Mix well. Fry it till dry.
Garnish with cilantro. Very delicious when served with rotis.
